     Tabbouleh(Tamil:ட-பௌ-லி or tab(b)ouli) Salad is a colorful salad with fresh cucumbers, tomatoes, parsley and mint. This world famous recipe is originally from Middle-East. Traditionally this salad is prepared with bulgur wheat but like many other traditional dishes this too has taken many variations. Tabbouleh Salad can be prepared with bulgur or couscous and sometimes quinoa. I prepared this salad using quinoa because I like quinoa, it has a nutty flavor and quinoa is a vegetarian protein powerhouse. Google for the health benefits of quinoa, sure it will amaze you.     Apart from all its health benefits, this salad is a party saver. Especially, when you have a party or potluck and you have guests who likes different cuisine then this is the salad for everyone. Actually I prepared this salad for a potluck, this salad is gluten free, completely vegan and no dairy in it, low carb and all this with a great taste. So lets start preparing.





    Ingredients:
    Red or White quinoa - 1 cup.
    Water - 2 cups.
    Large cucumber - 1 (peeled and chopped)
    Mint - 20 - 25 leaves.
    Parsley - 1 small bunch.
    Zest of 1 medium size lemon(just the yellow skin not the white part)
    Juice from 2 medium lemons or for taste.
    green onion - 3
    cherry tomatoes - 15 or pulpy tomatoes cut into big chunks.  .
    Extra virgin olive oil - 3 Tbsp.
    salt and pepper to taste.

    Cooking the Quinoa:
    • Rinse the quinoa 2 to 4 times or until the cloudy water runs clear. 
    • Cook the quinoa according to the package instruction.
    • Or bring 2 cups of water to boil and add 1 cup of washed quinoa and simmer for 20 min. 
    • After 20 min, drain the excess water.
    Salad Preparation:
     

    1. Remove the tip, peel and seed from the cucumber and chop them. 
    2. Chop the washed parsley and mint leaves coarsely. 
    3. Slice the scallions thinly.
    4. Grate the zest of 1 lemon(only the yellow skin of the lemon, the white part is bitter)
    5. Juice 2 lemons.
    6. Halve the cherry tomatoes, If using normal tomatoes, pick the ripe and pulpy tomatoes and cut them into big chunks.
    7. Combine everything in a big salad bowl, add 3 Tbsp of good quality olive oil and toss them gently. 
    8. Add the cooked quinoa to the salad bowl and season with salt and pepper according to taste. 

    Refrigerate an hour before serving.
